Seafood Pot Pie

Seafood Pot Pie
Serves 4

Sauce
1/2 cup celery diced fine
1/2 cup yellow onion diced fine
1/2 cup sherry
4 Red Bliss Potatoes quartered
1/2 cup carrots diced fine
1 cup sweet peas
2 cups clam juice
2 cups Heavy Cream
1 tsp fresh thyme
1/2 tsp white pepper
1 tbsp fresh tarragon

Saute vegetables until soft, add sherry and reduce until au sec. Add cream, potatoes, thyme, white pepper and tarragon. Reduce by half. Reserve.

Seafood
1/2 cup Lobster meat
12 each deveined shrimp
8 each Sea Scallops

Frozen Puff Pastry (Baked and sprinkled with tarragon)

Saute seafood in olive oil, add reserved sauce and heat thoroughly. Place in bowl and top with puff pastry.
